PALEO RECIPES for you to try. Who said paleo food has to be boring or bland?? Paleo, with its emphasis on fresh, seasonal foods, lends itself to enjoying the most current food trends while you stay true to your commitment to clean eating. Here are a few I’m enjoying right now…
Fennel and Tomato Soup from Vegetarian Times Magazine – swap out the soy sausage for real sausage. This soup tastes like pizza, really!
Kale and Brussels Sprout Salad – perfect for a weeknight dinner or a holiday meal.
Mustard Greens, Roasted Squash, Hazelnut Salad – skip the sugar or use raw, local honey in the dressing.
Braised Pork with Apple Cider and Ginger Beer – The recipe calls for pork shoulder, but I used pork tenderloin instead – a little more manageable. I think this could be made in the slow cooker with an equally yummy result.
